Apple-Raisin Bran Muffins

Beautiful!  Golden copper brown, moist, bursting with flavors of Ginger, Cinnamon & Cloves, not too sweet, but not all healthy and Om, Om good!  I am testing out the recipe for my Apple-Raisin Bran Muffins specifically requested by a sponsor for an upcoming healthier Brunch & Learn with ANALI Yoga.  I am happy to say, it was a success my first time out!  I mean, look at it!  #ThingsThatMakeYouGoOom   You will never buy a store-bought muffin again!

Though, I'll tell you a secret:  It's the same recipe as my Banana CocoNut Bread; I just switched out the Bananas for Apples and Bran Flakes instead of Coconut Flakes. Worked beautifully!

I know, it all seems so intimidating, at least initially.  In the day of being a hard-working mom, I only dreamed of being that mom, who bakes fresh breads, pies, cakes, biscuits and muffins from scratch.  Never knew I had it in me.  I'm 55 and on my own time, now, doing a little of the many things I enjoy - the art in my everyday - and it can get a little crazy - why I call it, MadlyLiving!  Baking is just one of many simpler pleasures I get to share with family, friends and guests.

The wonderful thing about baking is that once you learn the basics - you know what you know and from there, you can go anywhere, try anything new.  I am certain that one day, I will try a 3-tier wedding cake!  WOW, me!  Because now, I have developed a baking confidence and enjoy experimenting, switching out ingredients to work with what I have on hand.  I call it Baking With Chops.  You know the Food Network Show - Chops - where chefs must make something magical out of odd and unlikely food combinations.

Chicken Yassa

Om, Om, Om, we go, every time I make this dish!  SENEGALESE CHICKEN YASSA - One of the main dishes of Senegal, West Africa!  Essentially, grilled (baked, stewed or even fried) chicken in a caramelized onion and mustard sauce, most often served over Jasmine rice. This is my version, though, I can't even take full credit, as it's the most popular dish in Senegal, West Africa. 

I have had the extraordinary experience of living somewhat of a Senegalese life and have embraced some of its culture - especially, the cooking.  I won't brag about it too much, because although my version tastes pretty dang good, it doesn't touch the authentic preparations by my ex and his sisters!  WOW, can they cook!  The fresh herbs, the mix of seasonings, Oooooooom!  #ThingsThatMakeYouGoOom

Senegalese Chicken Yassa

I try to get as close as possible to authentic Yassa, though, with my spin.  Essentially, it's a chicken and rice dish with a gravy of mainly mustard, onions and lemon and, of course, herbs and spices, all mixed together and baked in the oven.  But, well, I like my chicken first seared, then grilled separately from the sauce and later placed in the already cooked-down mustard sauce (either simmered or baked) with tons of onions, lemon and garlic.  Served over a perfectly cooked Basmati or Jasmine Rice (no Uncle Bens, please) with a side of a fresh green salad, fresh-baked bread and a pitcher of Bissap (Hibiscus), the national drink of Senegal. 

A simple, but tasty dish.  Look up Chicken Yassa on the internet and try making your own version.  No matter how you do it, it is always just good!

Broiled Salmon

I mean, what more can I say?  You can almost taste it!  It's beautiful, tender, juicy - fresh herbs, spices (Dill, Rosemary, Paprika, Salt & Lemon Pepper) and Grannie's Garlic Butter, broiled in the oven on low for 10-20 minutes (just depending on the size).  It's that easy!  It's that good! #ThingsThatMakeYouGoOom

Although, not shown so well in this image, I had also broiled the inside flesh of lemons.  Takes the flavor over the top!  Funny thing, I was so excited when I pulled my salmon out of the oven and showed my guests just how beautiful, I can't believe that I forgot to add all of that fresh dill I'd purchased, not just for flavor, but as important, for color and presentation.  Duh!

Anyway, truly, there is nothing more I need to say!  The flavor, the tenderness, juiciness will blow you away!

Roasted Veggie Pizza

All vegetables!  Even the crust - made of a cauliflower rice and unbelievably, I have never had a pizza with more flavor!  And keep in mind, I am a meat lover; I never touch a pizza that doesn't have extra pepperoni and at the very least, Italian sausage!  So, in order not to scare away my family, I took it slow, and still added the cheese.  So, this is a true feat for me!

An avid fan of the Today Show, I was just thrilled to try this recipe!  Though, I cannot take credit for the recipe I got off their Food segment with Joy Bauer, but what I will take credit for are my layers of flavors, using my Signature House Blend (Rosemary, Thyme, Roasted Garlic, Hot Pepper Flakes, Salt & Grannie's Lemon Pepper), roasting all vegetables, including the cauliflower rice, my choice of vegetables (Tomatoes, Bell Peppers, Onions, Garlic, etc.) and, of course, I had to add ... cheese!

Yes, I could have done a better job with the cauliflower rice, but Grannie's Vitamix was acting up!

Though, truly, I believe it was the fresh-made Pesto Sauce that did it, for me!  Do you see all that flavor and it's not even finished!  Before I added the cheese, I wanted you to see just how beautiful and delectable the vegetables - all roasted - and good eats, as isOooooooom!  #ThingsThatMakeYouGoOom

NOTE:  Also, I think it important to mention that without the cheese, this pizza is all Veggie, Gluten-Free, Dairy-Free, Low-Carb & No Added Sugar!

Okay, so here's how it looks after I added my three cheeses (Mozzeralla, Cheddar & Jack), to give it that truly pizza impact. 

Here's The Today Show Recipe, though, as usual, tweak it to your tastes - perhaps Tomato Sauce, rather than Pesto, your choice of vegetables (Eggplant, Zucchini, Squash, etc.)

OMG!  I dropped the mic on this one!  We were blown away!  Vegetarian or not, you must try this recipe!

Chicken Pop Pie

It is cold outside!  A time when we all crave to come home to a hot, uh, uh,  meal - something warm, hearty, comforting, ready and waiting!  [Okay, I'll stop!]  For me, it's Chicken Pop Pie, made from scratch, aka my way.  Yes, I call it "pop," because that's what I do to it!  Oh, with my scratch-made pie crust, bottom crust of stuffing [yup, you heard me], roasted chicken & vegetables ladled in Grannie's Bone Broth and my home-made, fresh cranberry sauce on the side, OMG! You hear me, it POPS!

Honestly, though I've never had a chicken pot pie I didn't like, I tell you, there's nothing compared to making your own at home.  The aromas that fill the house!  On a frigid cold day, like it was yesterday, you can feel the warmth of Chicken Pop Pie rushing to greet you at your front door!   Ooooooom! #ThingsThatMakeYouGoOom

Though, Chicken Pop Pie is essentially thickened chicken soup, spooned into a pie shell and covered with a top crust, for me, oh, I must have a top AND bottom crust, some stuffing [Whaaat!  I hear you] Yup, stuffing is my bottom crust; but, what gives it that pop, I make my own cranberry sauce - from fresh cranberries!  My family just goes, Ooooooom!  And I tell you, I can never make enough!
