Hmmm? What to do with that extra Shrimp or last night’s vegetables - for breakfast?
As a kid, a rare treat, I loved EGG FOO YUNG, essentially a Chinese style omelette, which we are accustomed to being served with white rice and gravy as dinner/takeout at a Chinese restaurant.
But what you may not have considered is EGG FOO YUNG for BREAKFAST (without gravy or rice), then what you have is a VERY flavorful, healthy, my favorite - SHRIMP EGG FOO YUNG of fresh sautéed julienne-cut vegetables - cabbage (I had on hand some brussel sprouts), bean sprouts, spring onions, carrots, mushrooms, sweet and hot peppers with or without a meat (pork, beef, shrimp) you might have on hand and with that caramelized crust! WOW!
