TO FRY OR NOT TO FRY? I mean, is there really a question here!

Yes, yes, I understand! Baked, broiled, grilled, the healthier preferences on the regular. But, I’m sorry, A MORE NOSTALGIC CELEBRATIONAL DINING EXPERIENCE, the client especially requests an authentic southern down home, throw down of PAN-FRIED FISH with a cheesy grits casserole, fried green tomatoes, johnny cakes, of course my SLAP Biscuits but, with a side of sausage gravy and a few southern standards, frankly, I ain’t never heard of! I mean, who ever heard of "streak o' lean"?

So, I got busy comparing, testing, tweaking and preparing, since I don’t generally fry fish; but, a special request, well, here it is!

And OH, MY GAWD! Tastes even better than it looks! Well seasoned, but not salty, crunchy, golden! Grannie, my guinea pig and number one fan, says it’s the best she’s ever had! Oh, we were greaze’n at the stove...hot out the cast iron skillet! YOU HEAR ME!
